PinkLemonadeCupcakes

Today is all about celebrating summer, and making cupcakes. After all, what better way to celebrate anything by making cupcakes?

For the batter: 2 1/2 cups flour, 2 cups sugar, 2 teaspoons baking soda, 1/2 teaspoon salt, 2/3 cup oil (I prefer canola), 1 3/4 cup water, 1/2 teaspoon vanilla extract, 2 teaspoons vinegar, juice, and zest from 1 lemon.

In a bowl, mix all the dry ingredients, and zest. In a separate bowl, combine the wet ingredients (water, oil, extract, vinegar and lemon juice.) Slowly stir the wet ingredients in to the dry until no lumps are left. Pour batter into lined baking cups, 2/3 full. (Don't freak out if it's too wet - that's how it's supposed to be!) Bake at 350 F for 20-22 minutes.

For frosting: 2-3 sticks of softened butter, 1 1/2 to 2 cups powdered sugar, juice from 1/2 lemon (or 1/2 teaspoon lemon extract, but more organic the better!) and a few drops of red food coloring.

Beat the softened butter until creamy. Slowly add in powdered sugar, mixing and scrapping down the sides of the bowl as you go until you're satisfied with the sweetness. Add in lemon juice and food coloring and mix until the frosting looks like frosting! And finally, take pictures and send them to me! :) Enjoy.
